The Perfect Herb Butter Crusted Prime Rib Roast

During the holidays it's customary to cook your standard roasted turkey and ham, but this year I found a standing prime rib roast on sale and had to get it. I've cooked one before over 10 years ago at my nephew's house and it was a beautiful 10 lb roast. It was a very proud moment for me as I do consider myself a home chef.


Sooo....I decided to see if I could pull it off again. Of course I went on line and looked through tons of recipes and as I always do I pulled what I like from dozens of recipes and added my own touches. It's recommended to use a meat thermometer and of course I didn't have one so I just made sure I used a timer.


Note: It's very important you know the exact weight of your prime rib roast as this is how you will know your cooking time.


So Let's get started!


Ingredients:

4 to 6 lb prime rib roast

1 stick of butter

4 cloves of minced garlic

1/3 cup chopped parsley

1/3 cup chopped rosemary

1 tbsp onion powder

1 tbsp garlic powder

3 tbsp cup of coarse pink Himalayan Pink Salt

2 tbsp coarse black pepper




Note: It's important that you let the prime rib sit out until it's room temperature. I usually take it out as soon as I get up in the morning and let it sit out for at least 4 hours.


Directions:

1. Preheat the oven to 500 degrees F. That's not a typo...Yes 500 degrees F.

2. Mix all your spices together in a bowl with the spices and apply all over the roast



3. Put your roast in a roasting pan with a roasting rack or a cast iron skillet (this is what I used).


4. For the cooking time you will cook the roast 5 mins per pound. Since my roast was 4.34 lbs i cooked mine for 20 mins and after the 20 minutes you will turn off your oven and leave the roast in the oven for 2 hours. During this time you "WILL NOT OPEN THE OVEN"!


5. After the 2 hours you will remove the roast from the oven and if you cooked it in a cast iron skillet like I did, then you should remove it from the skillet and let it rest on a cutting board or another pan


6. Slice and serve with your choice of sides. If you

had some of the herb butter left like I did you can add it to the top of your prime rib or over your homemade mashed potatoes.


Leftovers: With the leftover prime rib roast I made sandwiches with my homemade Japanese Milk rolls!!!!
